Sofitel will bring the art of gastronomy to the forefront with La Nuit, a one-night-only Four Hands Dinner at Porterhouse Bar & Grill, Sofitel Dubai The Palm. Bringing together Daniel Hillier, Cluster Culinary Director for Sofitel Dubai The Palm, Sofitel Dubai Downtown and Sofitel Al Hamra Beach Resort, and Russell Impiazzi, Executive Chef of Sofitel Dubai The Obelisk, the exclusive dining experience celebrates the creativity, skill and passion behind exceptional cuisine.
Created as a tribute to the people who bring a culinary vision to life, the evening will showcase a specially curated multi-course menu that brings together the chefs’ individual expertise, contemporary techniques and distinctive approaches to flavour. The collaboration reflects Sofitel’s commitment to gastronomy as an art form, where culinary skill, thoughtful presentation and a spirit of discovery transform a meal into a memorable experience.
Inspired by Sofitel’s French heritage and its philosophy of art de vivre, La Nuit reflects the brand’s approach to hospitality, where gastronomy is an expression of culture, creativity and the pleasure of coming together around the table.
A celebration of culinary craft
At the heart of the evening is a menu that brings together technique, bold flavours and playful interpretations of classic dishes. The experience begins with a selection of chef’s snacks, including a haggis Scotch egg with truffle aioli and pickled shallots, anchovy toast with Parmesan custard, and fried rabbit with honey and mustard aioli.
Appetiser options include seared John Stone dry-aged steak tartare with truffle, black garlic and pickled mushrooms; butter-poached Scottish langoustine tails presented as a Langoustine Niçoise; and tomato consommé with Dorstone goats’ cheese profiteroles and black olive emulsion.
Among the main courses, guests can choose Wagyu Rossini with seared duck liver, chanterelle mushrooms, brioche and truffle jus; wild seabass with a lobster cassoulet and smoked bacon; or ricotta gnocchi with morels, charred leeks, Lincolnshire Poacher cheese and truffle velouté.
Dessert options include baba au rum, lemon chiboust with wild strawberries and Yorkshire rhubarb, and an artisan cheese board served with compotes and walnut bread. Across the menu, classic influences meet contemporary presentation, showcasing the chefs’ attention to detail and their shared appreciation for quality ingredients and culinary craftsmanship.
