Multi-Michelin-starred chef Yannick Alléno will open L’Abysse Dubai at One&Only The Palm on 19 October 2026, introducing his distinctive interpretation of omakase to the Middle East for the first time. Following L’Abysse in Paris, Monaco and Osaka, the intimate 34-seat restaurant combines Japanese craftsmanship, the close connection between sushi master and guest, and Alléno’sCuisine of Time in a setting shaped by precision, artistry and discovery.
At L’Abysse Dubai, Yannick Alléno creates a contemporary dialogue between French gastronomy and the precision of Japanese omakase. Maturation, extraction, and the careful role of time shape the experience, allowing the character of each ingredient to emerge with clarity and depth.
At the heart of the restaurant is a ten-seat counter, bringing guests closer to the sushi master as each course is prepared and presented before them. A further 16 seats are arranged throughout the dining room, alongside an eight-seat private dining room offering a more secluded experience.
The interiors, conceived by Laurence Bonnel and RoWin’atelier, create a restrained and immersive setting shaped by tactile materials, sculptural forms and controlled light. Works by William Coggin, Célia Bertrand, Silver Sentimenti and Rino Claessens introduce an artistic dialogue throughout the space, complementing the precision and movement of the culinary experience.
The omakase unfolds across 13 sequences and five movements, conceived as an emotional progression rather than a succession of courses. Guests place their trust in sushi master Ken Ishihata, who guides them from delicate opening bites and Emotions, or savoury compositions, through nigiri, a moment of transition and Amamis, the final sweet movement. Creations such as sea urchin with ginger mayonnaise, lightly grilled langoustine and azuki and combawa millefeuille are served at the precise moment when temperature, texture and flavour align. Curated pairings of wine, sake, tea and crafted infusions follow the same progression.
The opening continues Alléno’s longstanding creative relationship with One&Only The Palm, first establishedthrough two-Michelin starred STAY by Yannick Alléno, and introduces a distinctly different world, one defined by Japanese precision and craftsmanship.

L’Abysse was born from my love for Japan and Japanese gastronomy. It began in Paris, then travelled to Monaco and Osaka. Dubai was the natural choice for its next chapter, and One&Only The Palm has once again given us incredible creative freedom. L’Abysse Dubai will open its doors at One&Only The Palm on 19 October 2026, marking the latest chapter in Yannick Alléno’s international culinary journey and bringing the L’Abysse experience to Dubai for the first time.
