Pacific Groove At Paramount Hotel Dubai Debuts A Bold New Menu And Introduces ‘Oshi’ – A Sushi Spin-Off With Serious Star Power

At Paramount Hotel Dubai, where every corner is inspired by the golden age of Hollywood, the spotlight now turns to the culinary stage. Pacific Groove, the hotel’s signature dining destination, unveils a brand-new menu that celebrates the spirit of California’s bold cuisine. Wood-fired grilled finesse meets elevated coastal comfort in a line-up of dishes that are bold, beautifully crafted and made for the limelight. And stealing the scene is Oshi, a daring new sushi concept inspired by Osaka and dressed in West Coast attitude. 

Scene I: Pacific Groove – A Culinary Script That Sizzles 

The moment you enter Pacific Groove; there’s a sense of anticipation. The scent of open-fire cooking drifts through the air like a slow-building soundtrack, hinting at what’s to come. Think smoky, flavour-forward dishes that pay homage to California, made for sharing, lingering and savouring. At the heart of it all is the wood-fired grill, crackling with soul and intensity. It’s more than a cooking method here, it’s the restaurant’s very heartbeat, searing character into every dish. 

The flames take the lead with the Wagyu Rib-Eye; 300 grams of marbled decadence, cooked over fire and offered in two signature styles: natural or dry rub. Every bite tells a story of smoke, craft and confidence. Not far behind is the smoked BBQ Veal Back Ribs, slow cooked for 24 hours and finished on the wood grill. They don’t just fall off the bone – they make a statement when they do. 

Elsewhere on the menu, the Ribeye Tacos deliver an unforgettable flavour. Wrapped in soft tortillas and layered with guacamole, salsa tatemada and baladi cheese, they offer a handheld glimpse into Pacific Groove’s laid-back, California soul. And then there are the house burgers, true crowd-pleasers with their own character arcs. From the double-patty Santa Maria Wagyu Burger with Provoleta cheese to the flame-kissed Chicken Burger with grilled pineapple and spinach, each one carries the unmistakable mark of the wood fire – charred, juicy and impossible to forget. 

Even the sweet endings refuse to be background extras. The Macchiato 70% Dark Chocolate Fondant is a moody, molten classic paired with Madagascar vanilla bean ice cream, while the Yuzu Lemon Pie offers a tart, fragrant twist that refreshes the palate and rounds out the act with elegance. 

Scene II: Introducing Oshi – A Sushi Story with Style 

Just when the narrative seems complete, the plot twists. Oshi enters the frame; a contemporary take on pressed sushi, borrowing its foundation from traditional Osaka oshizushi, but layered with West Coast cool and just the right amount of edge. Served with its own brush, it is an invitation to quite literally paint on your own soy, your own flavour, your own finish. It’s theatrical. It’s tactile. And it makes the experience that much more personal. 

Square, stackable and snackable, each piece of Oshi is designed to be a statement, a modern bite with edge, texture and a brush of your own finishing touch. One standout option is the Oshizushi Beef Tartare, featuring US Prime Angus tenderloin perched on crisped, marinated sushi rice – bold and balanced with wasabi, pickled ginger and a hint of drama. For those craving something spicier, the Spicy Tuna delivers a citrus punch, infused with lemon zest and topped with black tobiko and spring onion; lively, layered and full of personality. The Smoked Salmon offers a cooler contrast; elegant and quietly seductive, brought together with dill cream, jalapeño and edible flowers. The Ebi Shrimp makes a playful appearance, sweet and delicate with kewpie mayonnaise, orange tobiko and a floral finish. Then there’s the Eel Unagi – torched, glazed with teriyaki and sprinkled with roasted sesame – deep, smoky and utterly unforgettable. And for those drawn to a plant-based storyline, the California Vegan Tofu is a crispy, creamy, modern alternative – topped with smoked paprika vegan mayo, avocado and affila cress for a bold yet balanced finale. 

Oshi is sushi, yes, but reimagined for the ones who dine between scenes, who sip while they share, who crave something unexpected. It’s a supporting act that quickly becomes the main attraction.
