Jumeirah Zabeel Saray has officially relaunched Arcadia by Amala, an intimate and elegantly curated culinary sanctuary offering a renewed interpretation of the Indian tasting table.
Opening its doors on Monday, 1 December 2025, the restaurant returns with a refined vision under the leadership of Chef de Cuisine Pravish Shetty, who brings two decades of experience shaped under the mentorship of Michelin-starred Chef Vineet Bhatia.
Celebrated for its 11-course seasonal tasting menu, Arcadia by Amala reintroduces its signature omakase-style, chef’s-choice Indian tasting menu– a unique culinary journey that blends traditional Indian flavours with contemporary techniques. Each course presents a thoughtful exploration of India’s diverse regional cuisines, brought to life through refined craftmanship and vibrant spice profiles.
Guided by Chef de Cuisine Pravish Shetty’s two decades of culinary experience; the menu draws inspiration from the dishes and regional cooking traditions he has encountered throughout his career. The result is a culinary journey that honours grassroots Indian flavours while reinterpreting them through a modern, globally attuned palate.
The restaurant’s atmosphere evokes a sense of calm and escapism, defined by earthy aromas, soft golden lighting, and the gentle crackle of the tandoor.Its elevated farm-to-table philosophy is supported by fresh produce sourced directly from Jumeirah Zabeel Saray’s on-site hydroponic farm,reinforcing the resort’s commitment to eco-conscious, future-forward dining.
Thoughtfully designed tableware inspired by nature and Eastern artistic motifs – from watercolour patterns to seashell detailing and oceanic-hued ceramics – enhances the sensory experience. Every element reflects Jumeirah Zabeel Saray’s dedication to elegance, craftmanship, and storytelling.
A hallmark of the dining journey is Chef Pravish’s personal interaction with guests,offering insight into the culinary philosophies and heritage behind each dish. The experience concludes with The Atlas of Arcadia, a thoughtful giftbox containing a menu guide, spiced rice pudding, and a curated QR code for a Spotify playlist, extending the journey beyond the restaurant.
