Akira Back, W Dubai – The Palm’s award-winning dining destination recognised by the Michelin Guide Dubai 2022 – 2025, invites guests on an extraordinary culinary journey with the launch of the Time Capsule Menu – a six-course experience celebrating the milestones of Chef Akira Back’s career.
Available daily from 7PM onwards until the end of October, the Time Capsule Menu takes diners on a gastronomic voyage through time, with each course reflecting a different era of Chef Akira’s journey, from his formative years at Kenichi in Aspen to the Michelin-acclaimed kitchens of London and Seoul.
Starting in the present and moving backward through time, the menu pays homage to Akira Back’s fearless creativity, his signature Japanese-Korean fusion, and the defining moments that shaped his international success. Guests can expect to savour dishes such as Shima Aji with Yuzu Ponzu and Nori Oil, Red Prawn with White Konbu and Angake Sauce, and the indulgent A5 Ribeye Miso Yaki with Ume Hollandaise. Each course is paired with music from the same era, creating a multi-sensory experience that immerses diners in the story behind every dish. The journey concludes with a nostalgic nod to Chef Akira’s roots – a Persimmon dessert inspired by his childhood in Seoul, Korea.
